PERU. Lima. 2006. Lurigancho Prison. Food preparation. The budget allotted for food remains at about one dollar per person per day, which is inadequate for proper nutrition. Inmates must earn money to increase their ration and purchase commodities including their beds. Some prisoners eat only leftovers and have no permanent place to sleep. The risk of contracting the Human Immunodeficiency Virus (HIV) is 5 to 7 times higher in prison than in the streets. Gangs run the penitentiary with little interference from officials.
