CHINA. Lhasa, Xizang. 1983. Butter made from the milk of yaks is an essential food for Tibetans. Besides butter-called ma in Tibetan-cheese and yogurt are also make from yak milk. Drinking tea with lots of ma in it and eating zanba, a type of meal made from rye flour, is the favorite food of Tibetans. Many shops in the Octagonal District in the old section of Lhasa are kept busy selling ma (Can We Feed Ourselves? # 67)
